The Healthy Snacking mini-series’ first episode is just in time for the International Pancake day on the 16th of February 2021. This recipe is enough for ten pancakes with 10cm in diameter.

What Do You Need:

  • 1 banana

  • 1 cup rolled oats

  • 1 tablespoon of peanut butter

  • 2 medium eggs

  • 1/2 cup unsweetened almond milk

  • 2 teaspoons baking powder

Serving recommendations: Pancakes are best served hot! Therefore, keep them covered and warm until you finish cooking the batch. Pop them in a dish in the oven at low temperature to keep them warm.

You can make a batch of pancakes and store them in the fridge for the next 2-3 days. It is easy to just pop one in a pan or toaster to warm up in the mornings. Change your topping choice to add some diversity to your snacking or breakfast!

How to Make the Hearty Pancakes?

Step 1: The first move is to prepare your mixer and attach the blade. Then peel your banana and add all your ingredients to the mixer’s bowl.

Step 2: Mix for 1-2 minutes until the consistency is thick and creamy. This recipe is perfect for fluffy pancakes!

Step 3: Heat your non-stick pan and pour the batter. Leave some space between the pancakes as they will spread a little.

Step 4: Cook on one side for 2 minutes until the edges are firm, and tiny bubbles appear on top of the pancake. Cook on the other side for approximately 1 minute.
