Inexpensive, quick to make and full of flavour, the Omelette Muffins are the perfect snack. This recipe is ready to put in the oven in minutes and is enough for 6 muffins.

After the Hearty Pancakes and the Energy Balls recipes, the Healthy Snacking mini-series' third episode takes you to a savoury snack. The Omelette Muffins are great for having between your meals to keep your stomach full and your energy levels up.

What Do You Need:

  • 4 medium eggs

  • 1 red bell pepper

  • 1 greed bell pepper

  • 1 handful of spinach

  • 50g Greek yoghurt

  • 1-2 slices of turkey ham

Serving recommendations: Grate some cheese on top of the muffins just as you take them out of the oven.

Sunday is the perfect day to cook a batch of 6 omelette muffins and store them in an airtight container in the fridge for the week ahead. Having a ready-made snack reduces any temptation to eat something unhealthy when I am at work.

How to Make Omelette Muffins?

Step 1: Chop your veggies and the turkey ham into small pieces and place them into a bowl.

Step 2: Beat the eggs thoroughly and season them according to your preference. Add the Greek yoghurt and mix well.

Step 3: Add the vegetables and turkey ham to the beaten eggs mixture. With a sauce spoon, scoop some of the mixture and place it in the muffin tray. Make sure to get a scoop full of all the ingredients.

Step 4: Fill the muffin cups ¾ and place the tray into the preheated oven for 15 minutes at 180 degrees.
